The secret's out! Here are 3 of our standby "no-fail" recipes, both for company and for everyday:
Apricot Pork Chops
¼ cup chopped onion
¼ cup apricot preserves
1 tbsp soy sauce (we use tamari)
2 tsp minced garlic
¼ tsp salt
3-4 pork chops (also works well with meatballs or chicken)
Brown pork chops, set aside.
Saute onion in some oil. Add remaining ingredients and simmer on medium heat until thickened.
Add pork chops to sauce and heat through.
French Beef Dip
1 beef chuck roast (3 lbs, trimmed)
2 cups water
¼ cup soy sauce (we use tamari)
1 tsp dried rosemary
1 tsp garlic powder
1 bay leaf
3-4 whole peppercorns
6 French rolls, split
Place roast in slow cooker. Add water, soy sauce, and seasoning. Cover and cook on high for 5-6 hrs or low for 8 hours, or until beef is tender. Remove beef from broth; shred with forks. Strain broth and skim off fat. Pour broth into small cups for dipping. Serve beef on rolls.
Spicy Honey-Brushed Chicken
2 tsp garlic powder
2 tsp chili powder
1 tsp salt
1 tsp ground cumin
1 tsp paprika
½ tsp ground red pepper
8 skinless, boneless chicken thighs (we often use chicken breasts, butterflied)
6 tbsp honey
2 tsp cider vinegar
Preheat broiler and broiler pan.
Combine first 6 ingredients in a large bowl. Add chicken to bowl, and toss to coat. Place chicken on broiler pan coated with cooking spray. Broil chicken 5 minutes on each side.
Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush honey mixture on chicken. Broil 1 minute. Remove chicken from over and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.

I always love to see what others cook. For someone like me, who doesn't love time in the kitchen, it's hard to come up with new ideas. These all sound wonderful, and not terribly difficult either :)
