Carrie just made these Zucchini pancakes for supper - SO GOOD! They're super simple too:
Ingredients
2 medium zucchini (about 3/4 pound)
2 tablespoons grated red onion
2 extra-large eggs, lightly beaten
6 to 8 tablespoons all-purpose flour
1 teaspoon baking powder
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
Unsalted butter and vegetable oil
Directions
Preheat the oven to 300 degrees F.
Grate the zucchini into a bowl using the large grating side of a box grater. Immediately stir in the onion and eggs. Stir in 6 tablespoons of the flour, the baking powder, salt, and pepper. (If the batter gets too thin from the liquid in the zucchini, add the remaining 2 tablespoons of flour.)
Heat a large (10 to 12-inch) saute pan over medium heat and melt 1/2 tablespoon butter and 1/2 tablespoon oil together in the pan. When the butter is hot but not smoking, lower the heat to medium-low and drop heaping soup spoons of batter into the pan. Cook the pancakes about 2 minutes on each side, until browned. Place the pancakes on a sheet pan and keep warm in the oven. Wipe out the pan with a dry paper towel, add more butter and oil to the pan, and continue to fry the pancakes until all the batter is used. The pancakes can stay warm in the oven for up to 30 minutes. Serve hot.

A new insight...
I came across the following as I was reading the other day (no, I haven't completely given up reading even though I've "graduated"!). Maybe this just seems obvious to others, but I had not previously considered(or at least had not thought about it in this way before) that one of the ways in which we are created in the image of God is in our mystery and unknowableness:
"To believe that we are born in God's likeness is to believe that what is deepest in us is mystery. Just as the essence of God is 'invisible and incomprehensible and passes all understanding', says Eriugena, so it is with humanity, created in God's image. What cannot be known about us is greater by far than what can be known. The deeper we delve into the mystery of our being the more we become aware of its limitless depths. This is not to preclude a scientific study and investigation of the human. Rather, it is to say that the heart of who we are always surpasses knowledge. We can be 'contained within no definition'...No one is to be regarded merely as an object, for at heart each woman and man is a holy mystery." ~Philip Newell

Just too cute...

My sister, brother-in-law, and nephew are moving to Watrous, SK in just a few weeks to begin a new pastorate. So excited for them! ...though I was really hoping that their next move would bring them a little closer to Winnipeg where I'll probably be landing in December. Carrie and I are spending a bit of time on the Canadian prairies in August and are hoping to start making arrangements for our move back to our home and native land.

Summer Crew 2011...

The chapel on campus will be undergoing renovation in the coming months so on Thursday we moved out everything that wasn't fastened to the building, which included these choir robes! Cara and I also donned the robes when we surprised the dean by showing up in her office with the upright base exclaiming, "Lost and found!" Dean Slough couldn't keep a straight face when she turned from her desk, saw us holding the bass, and responded, "Well it wasn't lost but you found it."
