The secret recipe is out...
Brownie Layered Cheesecake (grain-free)
Brownie Layer
1.5 cups butter;
12 oz semi-sweet chocolate (I use Ghirardelli 60% cocoa bittersweet chocolate chips);
1.5 cup demerera sugar;
3 teaspoons vanilla extract;
4 eggs, beaten;
2.25 cups almond meal (can be purchased, or you can grind your own in a food processor);
.25 cup coconut flour;
pinch of salt;
Preheat oven to 325F.
Melt butter and chocolate in a saucepan over medium heat, stirring until smooth. Remove from heat and mix in sugar and vanilla with a wooden spoon. Cool for a few minutes, then stir in the eggs, almond meal, coconut flour, and salt.
Pour into prepared pan. Bake for 15 minutes, or until are done edges and middle begins to set.
While brownie is baking prepare
Cheesecake Layer
1 8oz package of cream cheese;
2 tbsp butter;
1 tbsp arrowroot powder (substitute for cornstarch);
1 14oz can sweetened condensed milk;
1 egg;
2 tsp vanilla;
Beat cream cheese, butter and arrowroot powder until fluffy. Gradually add remaining ingredients. Pour over partially baked brownie.
Bake 25-30 minutes or until set and lightly browned on edges. Cool.
Finish with
Ganache Layer
1 cup cream or almond milk;
10 oz dark chocolate
Heat cream and pour over chocolate to melt, stirring until smooth. Pour over cream cheese layer and cool to set.
